Ingredients

  • 1 pound of protein
  • 2 white onions sliced
  • 2 carrots rangiri
  • 3 Yukon gold potatoes peeled, cubed
  • 2 cloves of garlic minced
  • 1 box Japanese curry roux
  • 5 cups of water wet
  • White rice
  • 1 tbsp tomato paste (optional)
  • 1 tbsp Worcestershire sauce (optional)
  • 1 tbsp ginger minced (optional)

Recipe

  1. Mise en place …in a dutch oven
  2. Sear protein then remove
  3. Sauté onions
  4. Add garlic, cook 1-2 minutes
  5. Add carrots and potatoes, cook 3 minutes
  6. Put protein back
  7. Add optional ingredients
  8. Add 5 cups of water
  9. Scrape and incorporate fond
  10. Simmer with lid on for 20 minutes or until potatoes are done
  11. Add roux one cube at a time with a ladle and a stirring instrument (chop sticks help)
  12. Simmer 15 minutes
  13. Serve à la rice
