Ingredients

  • 1 pound red kidney beans
  • 1 pound sausage and such
  • 1 large onion finely chopped
  • 1 green bell pepper finely chopped
  • 4 ribs celery finely chopped
  • 4 cloves garlic minced
  • 1 teaspoon cayenne pepper
  • 1 teaspoon sage
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • Few bay leaves
  • Frank’s hot sauce
  • White rice

Recipe

  1. Start soaking beans the night before. Soak in salted water
  2. Prepare rice
  3. Cook sausage in some oil
  4. Add veg and a big pinch of salt
  5. Cook things down
  6. Add garlic and cook for a minute
  7. Add spices and cook for a minute
  8. Add beans and cover with water by an inch or 2
  9. Add bay leaves
  10. Bring up to boil and then reduce to a bare simmer
  11. Cover and cook until beans is done. 1-2+ hours depending on beans and how long they were soaked
  12. Remove lid and cook until thick and creamy. Add water as needed if too much evaporated
  13. Season to taste with Frank’s
  14. Serve with white rice
