Ingredients
- 1 pound red kidney beans
- 1 pound sausage and such
- 1 large onion
finely chopped
- 1 green bell pepper
finely chopped
- 4 ribs celery
finely chopped
- 4 cloves garlic
minced
- 1 teaspoon cayenne pepper
- 1 teaspoon sage
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- Few bay leaves
- Frank’s hot sauce
- White rice
Recipe
- Start soaking beans the night before. Soak in salted water
- Prepare rice
- Cook sausage in some oil
- Add veg and a big pinch of salt
- Cook things down
- Add garlic and cook for a minute
- Add spices and cook for a minute
- Add beans and cover with water by an inch or 2
- Add bay leaves
- Bring up to boil and then reduce to a bare simmer
- Cover and cook until beans is done. 1-2+ hours depending on beans and how long they were soaked
- Remove lid and cook until thick and creamy. Add water as needed if too much evaporated
- Season to taste with Frank’s
- Serve with white rice
